This recipe is an easy yet tasty take on a Greek-inspired salad. This salad is full of many fresh and vibrant ingredients making it a perfect side dish for a summer barbeque.

I have also created a salad dressing below because this wouldn’t be a proper Greek salad recipe without one. If you find that your time-poor, a store-bought salad dressing is ok to use as well. However, if you want to make an authentic Greek salad then making a dressing is a must, as it ties the whole salad together.

Whether you enjoy this salad on its own on your lunch break at work, or you have it as a side dish for dinner, it’s so versatile. Why not try serving the chop salad with your favourite marinated chicken breast and some tasty greek flatbread? Yum!

Healthy Chop Greek Salad Recipe

Ingredients

Greek Salad

  • 200 g Fetta cubed
  • 15 Kalamata olives pitted
  • ½ cup Cherry tomatoes halved
  • ½ Medium cucumber diced
  • 2 cups Mixed lettuce leaves
  • ¼ Medium red onion finely diced

Dressing

  • ¼ cup Olive oil
  • 2 tbsp Red wine vinegar
  • 2 tbsp Lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp Dried oregano
  • 1 clove Garlic
  • Salt
  • Pepper

Instructions

  • Wash and dry lettuce and cucumber. On a chopping board, dice the cucumber into large chunks and finely dice the red onion. Next, place the cucumber, red onion and lettuce into a large bowl.
  • If not already, slice the olives in half and place them into the large bowl.
  • Lay the sundried tomatoes on some paper towel to remove the excess oil, then place them in the large bowl.
  • Now dice the fetta into cubes and place them into the bowl. Toss the salad until will incorporated.
  • Dress the salad just before serving and enjoy.

Dressing

  • On a chopping board, mince the garlic and add it to a small bowl.
  • Add the rest of the dressing ingredients to the bowl. Whisk all of the ingredients until well combined.
  • *The ingredients in the dressing might separate so make sure that you mix it just before pouring it onto your salad.

Salad Tips

Fresh vegetables

For the fresh ingredients in the salad, it is best to pick these ingredients up on the same day you plan to have the salad to avoid them from becoming overripe or rotten. Fresh vegetables are vital as the salad requires the fresh ingredients to be crunchy and firm to counteract the other ingredients that are quite soft. Consequently, this gives the salad more textures making it more interesting.

As for the dressing, the most significant ingredient is olive oil. I cannot stress enough how much better your salad dressing will be if you use a good quality olive oil. It is best to use a good quality olive oil as it will give your salad a beautiful aroma and a great depth of flavour.

So, there you have it! An easy and very tasty chop Greek salad with a beautiful and zesty dressing to be enjoyed all summer long.
