This healthy, vegetarian beetroot salad is packed with goodness, including fresh salad vegetables, healthy fats, and a load of dietary fiber. It’s our favorite kind of rainbow salad because it is crunchy, creamy, and contains versatile ingredients.
After consuming too much wine, chocolate, and take-out over Easter break, we all need something fresh and simple to feel good and satisfied at the same time. That’s why this beautiful fresh vegetarian salad is just the thing for those who need a salad with substance.
While we used coral-style lettuce, you can use any green leaves that you desire. Many people add mixed leaves, spinach & rocket, or standard cos lettuce. It really doesn’t matter. However, make sure that you really dry the lettuce and the lentils after you wash them.
For those of you who would like a fresher salad, you can always grate raw beetroot into the salad instead of using cubes of store-bought, cooked beetroot. As another fresh option, you can look at preparing your own lentils as per the packet instructions if you have the time to do it.
Also, if you want an extra punchiness to the salad, sprinkle some finely sliced red onion over the top. It’s delicious with or without it.
For those who have a nut allergy, or simply don’t like nuts, seeds are a great alternative to add some crunch. Actually, this recipe goes really well with toasted pepita seeds.
Furthermore, if you don’t want to add cheese and would prefer a vegan salad, just add a little more avocado for creaminess, and leave out the cheese. It still tastes good. If you leave out the cheese though, you might want to add some seasoning, as the feta adds that salty kick to the salad.
Finally, while we recommend our Maple, Lime & Herb dressing to bring the salad together, I often just grab the green goddess dressing out of the fridge and drizzle it over. It seems to go with just about everything.
