Vegetarian Beetroot Salad

This healthy, vegetarian beetroot salad is packed with goodness, including fresh salad vegetables, healthy fats, and a load of dietary fiber. It’s our favorite kind of rainbow salad because it is crunchy, creamy, and contains versatile ingredients.

After consuming too much wine, chocolate, and take-out over Easter break, we all need something fresh and simple to feel good and satisfied at the same time. That’s why this beautiful fresh vegetarian salad is just the thing for those who need a salad with substance.

Fresh Beetroot and Quinoa Salad

A vegetarian salad that is full of goodness. This fresh and vibrant beetroot salad has all the colors of the rainbow, and is packed with healthy fats and antioxidants to nourish your body.

Ingredients

Salad

  • 2 cups Lettuce leaves
  • 30 g Slithered almonds
  • 200 g Canned lentils drained
  • ½ cup Cooked quinoa
  • 1 Small carrot julienne
  • 1 Medium cooked beetroot cubed
  • 80 g Avocado diced
  • 40 g Light feta cubed

Instructions

  • The first step is to cook the quinoa as per the packet instructions. Be sure to rinse the quinoa thoroughly in a mesh colander before you cook it. We usually cook the quinoa in the rice cooker. While packet instructions may vary, we tend to go by a 1:2 ratio of quinoa to water. Once the quinoa is cooked, set it aside to cool in a bowl.
  • While the quinoa is cooking, wash and dry the lettuce leaves and place them in a salad bowl. Then peel and julienne the carrot, dice the avocado and the beetroot too. Place these ingredients into the salad bowl.
  • If you haven't purchased almonds that have already been slithered, roughly chop the almonds before adding them to the salad.
  • Cut 40g of feta into cubes and sprinkle over the salad.
  • Drain the can of lentils and rinse the lentils thoroughly before pat drying them with a paper towel, because there's nothing worse than a soggy salad. Scatter lentils over the salad.
  • Finally, once the quinoa is cooled down, evenly spread it through the salad then toss the salad to combine all of the ingredients well. Be sure not to over-toss the salad, or it will turn bright pink from the beetroot bleeding into it. We place the dressing of choice on the side so that you can choose how much or little you want to add.

Beetroot Salad Tips

While we used coral-style lettuce, you can use any green leaves that you desire. Many people add mixed leaves, spinach & rocket, or standard cos lettuce. It really doesn’t matter. However, make sure that you really dry the lettuce and the lentils after you wash them.

For those of you who would like a fresher salad, you can always grate raw beetroot into the salad instead of using cubes of store-bought, cooked beetroot. As another fresh option, you can look at preparing your own lentils as per the packet instructions if you have the time to do it.

Also, if you want an extra punchiness to the salad, sprinkle some finely sliced red onion over the top. It’s delicious with or without it.

Salad Swaps

For those who have a nut allergy, or simply don’t like nuts, seeds are a great alternative to add some crunch. Actually, this recipe goes really well with toasted pepita seeds.

Furthermore, if you don’t want to add cheese and would prefer a vegan salad, just add a little more avocado for creaminess, and leave out the cheese. It still tastes good. If you leave out the cheese though, you might want to add some seasoning, as the feta adds that salty kick to the salad.

Finally, while we recommend our Maple, Lime & Herb dressing to bring the salad together, I often just grab the green goddess dressing out of the fridge and drizzle it over. It seems to go with just about everything.
