Whether you’re entertaining, or enjoying a family meal together, fresh, healthy fish tacos are always a great choice. They’re so easy to make, and packed with healthy ingredients. And… they will only take about 30 minutes to make.

While many people love their fish crumbed and fried, grilling is a much healthier option that is low in saturated fats, and still tastes delicious. But, if you’re really want to have crumbed fish, consider crumbing it in a wholegrain crumb, and opt to air-fry the fish, instead of deep frying it.

Healthy Fish Taco Recipe

This healthy fish taco recipe is easy to make, flavourful, and takes about 30 minutes. It's perfect for entertaining or as a family meal.

Ingredients

  • 600 g Cod Fillets
  • 8 Whole Wheat Tortillas
  • 125 g Corn Kernells Drained
  • ½ cup Light Cheese Grated
  • ¼ cup Coriander Chopped
  • cups Lettuce Shredded
  • ¼ cup Light Chipotle Mayonnaise

Fish Marinade

  • 1 tbsp Extra Virgin Olive Oil
  • 1 Lime Juiced
  • 2 cloves Garlic Crushed
  • 1 Red Cayenne Chilli Finely Diced

Guacamole Salsa

  • ¼ Red Onion Finely Diced
  • ½ cup Cherry Tomatoes Cut into Quarters
  • Avocados Diced
  • ¼ cup Coriander Chopped
  • tbsp Lime Juice
  • 1 clove Garlic Crushed

Instructions

  • Slice fish into 8 fillets. Prepare a bowl with the marinade ingredients and marinade the fish in the refrigerator for 30 minutes.
  • In a large bowl, prepare the Guacamole Salsa. First, dice the avocado, and cut the cherry tomatoes into quarters and add to the bowl. Next, add the finely diced onion according to taste. Finally, add 1 clove of crushed garlic (or equivalent garlic paste), the lime juice, and coriander
  • Shred the lettuce, grate the cheese, drain the corn kernels, and chop the coriander. Add all of the condiments to separate serving bowls.
  • Heat a grilling pan and lightly spray with olive oil. Over a high heat, cook the fish for 2 minutes on each side or until cooked through.
  • Finally, heat the tortillas in the microwave as per packet instructions, and you're ready to lay everything on the table to share with your family and friends.

Tips for Buying & Cooking Fish Fillets

When it comes to choosing the right fish for your tacos, opt for a firm, white-fleshed fish. It’s mild in flavour. And, it’s delicate, flaky and quick to grill or bake. Some varieties include Ling, Mahi Mahi, cod or snapper. You’ll typically find several varieties of firm white-fleshed fish at your local supermarket.

Try and find thinner fillets of fish if you can. They’ll fit on your tacos easier, and the cooking time and marination time is significantly reduced with thinner fillets of fish. With that in mind, white fish cooks quickly. Therefore, you need to really watch your cooking time to ensure that it’s not overdone. To tell if it’s ready, it will start to flake easily when you put a fork into it.

Choosing Your Tortillas

While this healthy fish taco recipe chooses wholemeal flour tortillas, you can use traditional corn tortillas if you wish. We’ve simply chosen wholemeal or wholegrain tortillas for the added fibre. We also like the smaller tortillas as they are easier to handle.

Toppings & Condiments

Healthy, fresh toppings will make your tacos taste even better, without feeling heavy and full after you’ve finished the meal. We love topping our tacos with homemade guacamole salsa, light chipotle mayonnaise, shredded lettuce, and a sprinkle of light cheese. Fresh coriander, lime juice and corn kernels go really well with fish tacos too. And if you don’t like the chipotle mayonnaise you can opt for a salsa, or maybe leave off the dressing altogether. There’s enough flavour without the added sauce.
