Ingredients
  

  • 1 kg Scotch fillet beef (excess fat removed, cut into large chunks)
  • 1 tsp Black pepper
  • 3 tbsp Olive oil
  • 1 med Onion (diced)
  • 4 cloves Garlic (minced)
  • 3 med Carrots (peeled and sliced)
  • 2 stalks Celery (sliced)
  • cup Wholemeal flour
  • 3 cups Beef stock (salt-reduced)
  • 1 cup Water
  • 1 cup Red wine (substitute with extra stock)
  • 2 tsp Worcestershire sauce
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 350 g Baby potatoes (peeled and quartered)
  • 1 cup Baby spinach (roughly chopped)

Instructions

  • Heat 2 tbsp olive oil in a large ovenproof pot or skillet over medium-high heat. Season beef with pepper, then coat lightly with flour. Sear beef in batches until browned on all sides (about 3-4 minutes per batch). Transfer beef to a slow cooker or ovenproof dish.
  • In the same pan, heat the remaining 1 tbsp olive oil. Add onion, garlic, carrots, and celery. Cook for 5 minutes or until softened. Stir in tomato paste, Worcestershire sauce, and thyme, cooking for 1 more minute.
  • Pour in red wine, scraping the pan to lift any browned bits. Let it simmer for 2 minutes, then add beef stock. Transfer the mixture to the slow cooker or ovenproof dish with the beef. Add baby potatoes, stirring to combine.
  • Slow Cooker: Cover and cook on low for 8 hours or high for 4-5 hours.
    Oven: Cover and bake at 160°C (320°F) for 3 hours until the beef is fork-tender.
  • Stir in chopped spinach during the last 10 minutes of cooking. Adjust seasoning if needed, then serve warm.
