With more people opting for a vegetarian diet, lentils are becoming increasingly popular.  They’re a great food that’s low in fats and high in proteins. That makes this vegetable and lentil soup perfect for people who have a vegetarian diet. Also, lentils are packed with vitamins, minerals, and antioxidants to boost your immune system. Lentils are used in a variety of dishes, but lentil soup is a definite favourite. Vegetable and lentil soup is a robust meal, that will fill you up and keep you going for hours.

This Moroccan vegetable and lentil soup is really healthy. It’s also so simple to make and won’t take much time to prepare. You can also keep it for the next day and take it to work or enjoy it for dinner again.

Vegetable and Lentil Soup

  • 500 g brown lentils
  • 3 tbsp extra-virgin olive oil
  • 2 brown onions diced
  • 8 cloves garlic crushed
  • 3 celery sticks sliced
  • 4 peeled tomatoes diced
  • 2 bay leaves
  • ½ cup fresh coriander finely chopped
  • litres vegetable stock liquid
  • 1 tsp salt
  • 1 tsp pepper ground
  • 1 cayenne red chilli finely diced
  • ¼ cup tomato paste
  • 2 carrots diced


  • Rinse the lentils in cold water and drain them.
  • In a large saucepan, add olive oil, onions garlic and celery. Cook on a medium heat for approx. 5 minutes or until the onion is soft and translucent.
  • Next, add the tomatoes, bay leaves, coriander and 2 litres of vegetable stock to the pot. Bring to the boil.
  • Add the salt, pepper, chilli, lentils, tomato paste and carrots. Reduce to a simmer and cook for 45 minutes or until the lentils are soft and tender. Add additional stock if required to stop the soup from thickening too much.
  • Once the soup is ready, garnish with coriander and chilli, and serve with your favourite crusty bread or soup biscuits. Yummy!

If you are not into vegetarian meals and crave that meat fix, you can always add chicken or beef to the soup.

While the recipe states 3 tablespoons of olive oil, you can always use an oil spray to keep down the fats and calories.

Finally, if you want to keep the sodium down, use a salt-reduced stock and don’t add any salt. It will still taste yummy!
