According to popular belief, salads are enjoyed as summer food. But really, salads can be enjoyed all year round. Especially if you add some hearty vegetable ingredients to them. This roasted pumpkin and beetroot salad is bursting with colour, textures, and flavours. It’s the tastiest winter salad, and it’s packed with so much goodness.

Adding pumpkin and nuts to salad somehow makes it feel like comfort food. You can feel warm and satisfied by keeping the beetroot and pumpkin warm too.

Salads can be enjoyed all year round. Try this tasty pumpkin, beetroot and feta winter salad today. It's a warm, hearty salad that is full of color, flavor and nutrients.

  • ½ cup Walnuts or Almonds chopped
  • ½ medium Pumpkin cubed
  • ½ small Red onion thinly sliced
  • 120 grams Mixed greens washed
  • 1 medium Avocado cubed
  • 2 Beetroots (cooked) cubed
  • 100 grams feta crumbled
  • 2 tbsp Red wine vinegar
  • Black pepper ground


  • Preheat oven to 200°C (180°C fan-forced).
  • Chop the pumpkin into cubes. Place baking paper on a baking tray and spray with olive oil spray. Sprinkle with black pepper and cook until tender and golden (approximately 25 minutes).
  • Remove the pumpkin from the oven and set it aside to cool.
  • While the pumpkin is cooking, finely slice ½ red onion. Cut feta, beetroot, and avocado into cubes. Crush or chop the nuts.
  • Place all ingredients into a large salad bowl and lightly toss through with a drizzle of red wine vinegar.

Tips and Swaps

This winter salad is a fantastic option for vegetarians, with a good mix of nutrients. But for those who like to have a serving of protein with their meals, this pairs nicely with grilled chicken.

Many people love goat’s cheese. For that extra punch, goat’s cheese is a good option and compliments the salad ingredients well.

While we’ve chosen to use almonds, you can choose a variety of nuts to go with this winter salad. Walnuts, almonds, and pecans are a great addition. But, if you have a nut allergy, you could add seeds, such as roasted pepita seeds or quinoa for that extra crunch and texture.

While the light option of red wine vinaigrette has been chosen for this recipe, green goddess dressing or caramelized balsamic vinegar will complement the salad too.

Finally, we buy freshly cooked beetroot that has been packaged. However, if you want to add fresh beetroot from the grocer, pop it into the oven when you cook the pumpkin. Be sure to use a separate baking tray for the beetroot as the cooking time may vary and the beetroot could bleed.
