We’ve got you covered this Christmas, with some amazing recipes to cook. You can’t go past these moist, fluffy and festive Christmas cupcakes. They’ll be a crowd-pleaser at your next holiday gathering!
This recipe includes a super simple vanilla cupcake recipe with a vanilla buttercream icing and a cute little holiday-themed decoration to put on top.
These cupcakes are a great holiday activity to do with the entire family. You could even get your little ones involved, especially for the fun decorating process.
– 3 eggs
– 1 cup butter, softened
– 1 cup caster sugar
– ½ cup milk
– 1 ½ cups self-raising flour, sifted
– 1 teaspoon vanilla extract
– 1 cup butter, softened
– 1 cup icing/powdered sugar, sifted
– a teaspoon vanilla extract
– Store-bought fondant (green)
– M&M’s (red)
Firstly, preheat your oven to 160 degrees Celcius, fan-forced. Then place approximately 20 cupcake liners into your cupcake pan and put them aside for later.
Once you’ve completed the first steps, in a medium mixing bowl beat or whisk your eggs, sugar and butter until the mixture becomes light and fluffy.
Next, add the flour, milk and vanilla to the mixture. Beat the mixture for approximately 2 minutes or until it is light and creamy.
Once you’ve mixed the batter, evenly distribute the mixture into the cupcake pans you prepared earlier.
*A good tip is to use an ice-cream scooper to ensure the mixture is evenly distributed throughout the pan.
After you’ve evenly distributed the mixture into the patty pans, place the pans into the oven and bake for 18-20 minutes, or until a skewer comes out clean.
Place the baked cupcakes onto a cooling rack to completely cool before you start to ice and decorate them.
While you let the cupcakes cool, you can start to prepare the icing. In a medium mixing bowl, add the icing sugar, butter and vanilla. Beat the mixture until it’s light and fluffy. And add food colouring if you’d like to. We added yellow this time.
Next, place the icing in a piping bag. We like to use a star-shaped nozzle.
*A good tip is to place the bag in a long glass when transferring the icing from the bowl to the bag. This way, if the icing comes out of the nozzle it will not make a giant mess all over your kitchen bench.
Once you have finished the icing and the cupcakes are cool, you can start to decorate. For my Christmas cupcakes, I printed out a holly leaf stencil and carved the leaves out on green fondant. I placed two leaves on each cupcake, then I placed two red m&m’s in between them.
And there you have it. The most delicious Christmas cupcakes ever. There’s nothing else to do except to enjoy them!
