A delicious cobb salad that you should definitely find the time to make. If you are not the biggest fan of salad, then this would be the perfect salad for you to make. You can make this salad ahead of time by preparing all of the ingredients and storing them in the fridge for later. You can find some great storage containers at kitchen and homewares stores online.

Delicious Cobb Salad

Cobb salad is a great salad recipe for those who aren't so keen on salads. It's robust, colorful, and delicious, packed with fresh ingredients, bacon, eggs, and chicken.

Ingredients

  • 1 small cos lettuce
  • 4 hard-boiled eggs halved
  • 4 rashers of bacon diced
  • 1/2 cup tasty cheese
  • 1 chicken breast grilled
  • 10 cherry tomatoes halved
  • 1/4 red onion sliced
  • 1 cob of corn
  • ranch or caesar dressing

Instructions

  • Preheat the oven to 200℃ on fan-forced. Cover the cob of corn in foil and cook it in the oven for 15 minutes or until slightly charred.
  • Boil a pot of water on the stove. Once the water is bubbling, place the eggs in the pot and allow them to boil for 8 minutes.
  • Put the boiled eggs in a bowl and place the bowl in the fridge.
  • Lightly grease a pan and place it on the stove. Cook the bacon until crispy and set it aside for later.
  • In the same pan, grill the chicken breast until it is cooked through. Place the chicken on a chopping board and cut it into slices.
  • Wash all of your fresh ingredients. On a chopping board, prepare all of the fresh produce and then place it into a large bowl and toss it until well combined.
  • Put the dressing on the salad just before serving.

Notes

*We use short-cut bacon, but use whatever bacon you have or prefer.

Ingredient swaps

If you are not a fan of fresh tomatoes, you could use sundried tomatoes instead. Just make sure you remove the excess oil from the sundried tomatoes so that the salad does not become soggy.

If you are a fan of blue cheese, many other cobb salad recipes use crumbled blue cheese rather than tasty cheese.

Grilled chicken breast is not the only protein source that can be used in this recipe. Some other protein sources that we have found to go quite nicely with the salad are sautéed prawns or grilled steak.
