Oats are so healthy and packed with texture. They’re high in fibre and really good for you. You can’t go past a hearty, homemade oatmeal bread, made with rolled oats, wholemeal flour, and brown sugar. Oats are not only good for you. They’re also packed with flavour and moisture to keep your bread tender.
Homemade oatmeal bread tastes great with sandwiches for lunch, and it keeps for longer than a lot of store-bought breads. As it gets a couple of days old, it’s delicious toasted too. The recipe below makes two loaves of fresh bread. You can make it ahead of your busy week, and freeze it to enjoy when you’re ready.
we always like to choose flour that is higher in fibre, which is why we’ve opted for wholemeal. But, if you really don’t love wholemeal bread, you could try using half white, and half wholemeal flour. Or, there are some brands that contain added fibre to them. Additionally, we like to buy really good quality flour. Do your google search online to find the best flour available in-store.
For a golden brown crust, you can use an egg wash. this will also help oats to stick to the top of the bread. While you can spray water breads such as baguettes with water to help form the crust, this is a moist bread, and it won’t work well with it.
You can add just about anything to this bread for added texture, nutrients and flavours. We often add cranberries and nuts. If you have a sweet tooth, dark chocolate chips work well too. Make sure you add these after the rise and gently knead them into the dough. And, if you have a bread machine, it will do it for you.
Furthermore, for those who don’t want to add sugar, honey brings a lovely sweetness to the recipe and works very well with the other flavours.
The homemade bread recipe makes 2 loaves of bread, so be sure to halve the dough before the first rise.
Finally, if you’re ever freezing homemade bread, allow it to cool completely before you bag it and put it into the freezer. If stored in the freezer correctly, oatmeal bread lasts up to 3 months. And, when you’re ready to eat it, let it thaw on the bench just like you would with store-bought bread.
